Eggless White Chocolate Mango Mousse

As a blogger, whenever I see some ingredient, the first thought that comes to my mind is “What new dish can be made with this?” When a friend of mine recently gifted me some Alphonso Mangoes, that’s exactly what was going on in my mind. Being summers, having something chilled is always soothing. Mousse. That was what I was going to prepare.
Next thing to do was, to look up for some interesting recipes.The recipe from recipeyard caught my attention. Thankfully I had all the ingredients in stock. As went along with the preparation, I tweaked the quantity of ingredients to suit my liking. The end result was a smooth and light mousse.

Instructions
  1. Chill the beaters/whip and bowl and whipping cream.
  2. Puree the mangoes in a blender and keep aside.
  3. Take the fresh cream in a pan and bring to a boil.
  4. Switch off heat.
  5. Add the chopped chocolate into the fresh cream and mix till the chocolate is melted and well incorporated.
  6. Take the chilled bowl. Pour the whipping cream into it.
  7. Beat the cream till soft peaks are formed.
  8. Add the powdered sugar.
  9. Beat till you get stiff peaks. Check and adjust the sweetness to your liking.
  10. Add the mango puree into the chocolate mixture and mix well.
  11. Slowly fold in the whipped cream into the mango-chocolate mixture till well blended.
  12. Transfer to individual serving cups.
  13. Place in the refrigerator for a couple of hours.
  14. Garnish with white chocolate shavings, chopped mangoes etc and serve chilled.
