This time when D requested for Pasta, I wanted to try something new, something quite different from what I had been making. A quick look at my saved recipes, I came across this Creamy Penne Pasta with Roasted Chicken recipe from 'Simple Daily Recipes'. It was indeed a simple recipe and it turned out to be delicious too. D absolutely loved it

Though I used Penne pasta for this recipe, any pasta of your choice would be just as fine. Vegetarians can use vegetables in place of chicken. Here's the recipe

Cooked Pasta  2-1/2 cups (1-1/4 cups raw pasta)
Butter  4 tablespoons
Crushed garlic  1 clove
Chopped Onion  1/3 cup
Flour  4 tablespoons
Chicken stock  2 cups (I used 2 cups water with 1 chicken stock cube)
Sour cream, curd or milk  1/2 cup (I used milk)
Salt to taste
Pepper powder  1/8 teaspoon (you can add more if you want)
For Roasted Chicken
Diced boneless chicken  2 cups (you can use more or less)
Salt to taste
Pepper powder  1 teaspoon
Oil  1 tablespoon


  1. Marinate the chicken pieces with salt and pepper for a few minutes. Heat oil in a pan and put the marinated chicken in it. Cook on high flame for 2 minutes. Reduce to low flame and let it cook till the chicken turns light brown in colour. Switch off heat and keep aside .
  2. For cooking pasta, take a pan of water. More, the better. Put it on heat and let it boil. When it comes to a rolling boil, add the pasta and keep stirring the initial few minutes, so that they don't stick to each other. Usually pasta takes approximately 8-10 minutes to cook. Make sure it is not overcooked. So keep a watch. It should be 'al dente' - firm, yet tender, with a tiny core in the middle. When you cut into a piece, there shouldn't be any white in the centre of the pasta. It should be opaque. Drain into a colander.
  3. Melt butter in a pan. Cook garlic and onions over medium heat, until onions have softened. Add flour and cook 1 to 2 minutes, stirring constantly.
  4. Stir in broth, stirring frequently until sauce comes to simmer. Remove from heat. Stir in sour cream/curd/milk until it well blended. Season with salt and pepper. Add the cooked pasta and the roasted chicken and mix well. Serve immedietely. Bon Appetit !!.
