Pachadi is a traditional side dish of South India similar to the North Indian Raita. One can find a lot of variations like Mango Pachadi, Pineapple Pachadi, Beetroot Pachadi etc. The recipe I am giving here is of Beetroot Pachadi, which is really appealing to the eyes. This curd based dish is very refreshing as well.

Instructions
  1. Grind the coconut with mustard seeds, chillies and cumin seeds to a fine paste and keep aside..
  2. Heat a pan and add grated beetroot, salt and turmeric and mix well. Cover and cook till beetroot is done.
  3. Add the ground coconut and mix well. Let cook till the water dries off.
  4. Add the curd and mix well. When it starts to boil switch off heat.
  5. Heat oil in another pan.
  6. Add mustard seeds. When they start to splutter, add sliced shallots and curry leaves.
  7. Saute till the shallots turns brown in colour.
  8. Pour this over the Pachadi and mix well.
  9. Serve with Rice.
