Instant Dhokla
Khaman Dhokla is one of the most famous Gujarati snack.Traditonally, Dhokla is made by soaking rice and lentils and grinding into a batter which is then fermented overnight and steamed. The Khaman dhokla is made using Bengal gram (Chana dal) whereas the Khatta Dhokla is made using Black gram (Urad dal).

Instructions
  1. In a bowl, mix besan, chilli paste, ginger paste, salt, turmeric powder well.
  2. Add curd and then add eno and mix well. Keep aside for a couple of minutes.
  3. Pour into a greased pan and steam till cooked. You can also cook in the microwave on high power for about 4-5 minutes. (This is a tip I got from my dear friend Anu...Thanks Anu 🙂 ).
  4. Check by inserting a toothpick at the centre. If it comes clean, it is cooked. Cut into squares.
  5. For garnish:.
  6. Heat the oil. Add mustard seeds. When it starts to splutter add the curry leaves and green chillies.
  7. Add the water mix and let it heat up. Switch off when it's just short of boiling.
  8. Add the coriander leaves. Pour this on top of the squares. Leave it for sometime till the water is absorbed.
  9. Garnish with grated coconut(optional).
  10. Enjoy!!!

    Did make it, though I didn’t steam it, put it into the microwave. everything was ok, except that the surface was dry ( courtesy microwave) so lemme think whats to be done about that. Covering it you think will help?

    Glad to know that u tried… Did u pour the garnish – as in lemon juice mixture on top and see?? I had tried in microwave only once and it came out nice…How long did u cook it for??

    I cooked it for 4 minutes. I did garnish it on top. Will be making it tomor again. Lets see how it turns out this time.
