Gulkand is a preserve made with Rose petals. It has cooling properties and also aids in digestion. The process of making Gulkand is very easy. Ideally Damask Rose (Rosa Damascena) or Provence Rose (Rosa Centifolia) are to be used to prepare the jam.

  1. Soak the rose petals in clean water for approximately 30 minutes.
  2. Drain and spread in a newspaper/cloth to remove moisture.
  3. Once there is no water content, take a handful of petals and place in a jar.
  4. Add equal amount of sugar.
  5. Make layers of rose petals and sugar till the brim of the jar.
  6. Cover the jar with the lid.
  7. Place the jar in sunlight for 7-10 days.You should stir the mixture everyday with a clean dry spoon.
  8. As days pass by, you'll see that the petals shrink and the mixture becomes dark brown in colour.
  9. Gulkand is ready.
  10. You may store the Gulkand in a refrigerator for 6 months.
