Its Summer Time!!! Nothing can beat the refreshing feeling you get when you take a sip from a chilled drink on a hot summer day!!...So the first thought that flashed in my mind when I wanted to make a soup was to make the chilled cucumber-mint soup. Last summer when I had tried this, it was a hit among our guests. I doubt if you can make a soup quicker than this one.. :-)
I have to confess that I got the idea from some site but tried it my way as the ingredients mentioned in that recipe were not in stock with me. So here goes the recipe
- Heat a pan with oil and saute the onion till translucent .
- Switch off and let cool.
- Transfer all the ingredients including onions into a blender and blend for about 30 seconds.
- Check the seasoning.
- Transfer to a bowl and chill in the refrigerator.
- Garnish with mint leaves before serving.
