Macaroni and Cheese, commonly known as Mac and Cheese is the combination of cooked elbow macaroni and cheese sauce. Earlier I used to make macaroni with white sauce. When I came across the Baked Macaroni and cheese recipe by Alton Brown, I decided to give it a try. Boy!!! Was it yum??? D just loved it. What I liked the best about this dish is the crunchiness of the breadcrumbs along with the mac n cheese. Here’s the recipe for all you Mac n Cheese lovers 🙂

  1. Preheat oven to 180C.In a large pot of boiling, salted water cook the pasta to al dente.Drain and keep aside.
  2. Melt the butter in a pan. Whisk in the flour and mustard and keep it stirring for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
  3. Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2 litre casserole dish. Top with remaining cheese.
  4. Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

    Hey Puja,
    You can omit the egg if you want.
