Aam Panna (Raw Mango Drink)

Summer is here. A cool refreshing drink is what we yearn for, during this season. D’s request for refreshing drink always keep me on my toes. With the easy availability of mangoes, I prefer to make and store Aam Panna in the refrigerator.  Whenever a request is up, all I have to do is pour a little bit of the concentrate into a glass. Pour water, add a few cubes, give a stir and Voila !!

If you have really sour mangoes, you may add more sugar into the mix. As for serving, you may use the concentrate to suit your taste. For smaller glasses, 1-2 tablespoons of the concentrate for suffice for each glass. You can see the video of How to Make Aam Panna here.

Instructions
  1. Take the mangoes in a pressure cooker.
  2. Add water as required.
  3. Cover and cook. (3-4 whistles)
  4. Remove the mangoes from the water. Discard the water. Allow the mangoes to cool.
  5. Scrape the pulp of mangoes into a bowl. Discard the skin and seeds.
  6. Transfer the pulp into a grinder, along with mint leaves. Grind to a smooth, fine paste.
  7. Take the pulp in a pan.
  8. Add sugar, cumin powder and black salt.
  9. Mix well.
  10. Add water and mix well.
  11. Cook till the sugar has dissolved completely. Switch off heat.
  12. Allow the mixture to cool completely.
  13. Transfer to an airtight container and store in a refrigerator.
To Make a Large Glass of Aam Panna
  1. Take a large glass.
  2. Add a few ice cubes.
  3. Pour 2-3 tablespoons of Aam Panna concentrate.
  4. Pour water and mix well.
  5. Garnish and serve.
